Ingredients:
For the Pistachio Crust:
- 1 cup shelled pistachios (finely ground)
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 large egg yolk
For the Irish Cream Custard:
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/4 cup Irish whiskey (or Irish cream liqueur)
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp cornstarch (optional, for thickening)
For Garnish:
- Crushed pistachios
- Fresh mint leaves (optional)
Instructions:
Step 1: Prepare the Pistachio Crust
Start by preheating your oven to 350°F (175°C) and lightly greasing a tart pan or lining it with parchment paper.
In a food processor, combine the finely ground pistachios, flour, powdered sugar, and salt. Pulse until the ingredients are well mixed. Add the cubed butter and egg yolk, and pulse again until the dough begins to form. If the dough seems too dry, add a teaspoon of cold water to help it come together.
Once the dough is ready, press it into the bottom and up the sides of your tart pan, ensuring it’s even and smooth. Chill the crust in the fridge for about 15 minutes to help it set before baking.
After chilling, bake the crust for 10-12 minutes or until lightly golden. Let it cool completely before adding the custard.
Step 2: Make the Irish Cream Custard
In a medium saucepan, heat the cream, milk, Irish whiskey (or Irish cream liqueur), and granulated sugar over medium heat. Stir occasionally to dissolve the sugar, bringing it to a simmer.
Meanwhile, whisk together the eggs and vanilla extract in a separate bowl. If you prefer a thicker custard, add 1/2 tsp of cornstarch to the egg mixture.
Once the cream mixture is simmering, gradually pour it into the egg mixture, whisking constantly to avoid curdling the eggs. After combining, return the mixture to the saucepan and cook over low heat, stirring constantly. Keep an eye on it as the custard thickens (about 5 minutes). Be sure not to let it come to a boil.
Once thickened, remove the custard from heat and let it cool to room temperature before filling the tart shell.
Step 3: Assemble the Tarts
When the custard has cooled, pour it into the pistachio crust, smoothing the top with a spatula. Chill the tarts in the refrigerator for at least 2 hours or until the custard has set.
Step 4: Serve & Garnish
Just before serving, sprinkle crushed pistachios on top of the tarts for a little extra crunch and a pop of color. You can also garnish with a sprig of fresh mint for a refreshing touch.
These Irish Cream & Pistachio Tarts are a charming, indulgent dessert for your St. Patrick’s Day celebration. The combination of creamy custard with the earthy, nutty pistachio crust creates a perfect harmony of flavors that’s sure to impress. Whether you’re hosting a gathering or enjoying a quiet moment with a cup of tea, these tarts bring warmth and beauty to your Cottagecore-inspired St. Patrick’s Day festivities.
Happy St. Patrick’s Day, and enjoy the cozy, enchanting flavors of the season! 🍀🌿🌸
